I was inspired to make this bagels & schmear recipe for AOC after she tweeted that she’s only eating veggies for 40 days of lent and looking for recipes! As Canadians, we wanted to help her out by making plant-based recipes that she would enjoy!

We asked our friends south of the border what they thought would be best, and they told us every New Yorker loves bagels & schmear. So we decided to make a veggie-focused “Dairy-free Bagels & Schmear” recipe!

Bagels & Schmear Rescue Dog Kitchen
Ingredients for Bagels & Schmear:
The ingredient list for bagels & schmear is depended on your taste but I’m going to list how to make it plant-based! Personally, I love a good everything bagel from our local bakery so that’s what we used but choose which one you love!

What you need to make dairy-free schmear:

Plain plant-based cream cheese (Our favourite is Tofutti but I have no idea what you have down there!)
Garlic
Dried parsley
Onion powder
Garlic powder (optional)
Microgreens (optional)
We like adding a little bit of garlic powder for an extra boost of flavour, but if you’re going to add garlic, make sure it’s on a day you’re working closely with Republicans lol

Bagels and Schmear Recipe
How to Make Bagels & Schmear
This bagel & schmear recipe is so easy, which is perfect for those who are busy trying to make the world a better place for us all.

Cut your bagel in half and place it in a toaster. Adjust the setting to how you like your toasted bagel. I set mine at about 6 out of ten so it’s crisp on the outside and still a little bit chewy on the inside!
While your bagel is toasting, let’s make the dairy-free schmear. In a bowl, scoop three heaping spoonfuls of your plain dairy-free cream cheese of choice (I use violife or tofutti cream cheese). Add more if you want more schmear but this was an adequate amount for one bagel!
Sprinkle the other ingredients (except microgreens if you’re using them) and mix until combined.
Once your bagel is toasted, give it a minute to cool off, and then lather it in your bowl of dairy-free schmear!
If you want to add microgreens, top with microgreens! Trust me when I say microgreens are a game changer!

Toaster – We love this toaster! It’s basic, cheap and gets the job done, what more can you ask for in a toaster!
Smart Toaster we might buy if we won the lottery – If you’re looking for a toaster that has a full-on touchscreen attached to the front of it… try this one. It’s EXTRA but I kind of want it lol maybe if we ever won the lottery we’d buy it but we’d probably just donate it instead. Still fun to look at though!

Ingredients
1 Bagel we used everything bagel
3 tablespoon Plant-Based Cream Cheese we love Violife and Tofutti
½ tablespoon Garlic minced
1 teaspoon Granulated Onions
1 teaspoon Parsley dried
1 teaspoon Garlic Powder optional
1 bunch Microgreens optional

Instructions

Cut your bagel in half and place it in a toaster. Adjust the setting to the darkness you like.
While your bagel toast let’s make the schmear. In a bowl scoop three heaping spoonfuls of your plain cream cheese of choice, more if you want more schmear but this was a lot for one bagel!
Add the other ingredients (except microgreens if you’re using them) and mix until combined.
Once your bagel is toasted, give it a minute to cool off, and then lather it in schmear!
If you’re using microgreens top with microgreens.

Realistically any bagel type works and any toppings work so feel free to experiment with them and see which you like best!
Microgreens add a ton of nutrition, and flavour to the bagel so I recommend looking into them if you haven’t heard of them before!

I used an almond milk chocolate bar which melted pretty quickly, but some of the other darker chocolates take a little longer to melt.

Take your graham crackers out of the package and split down the middle and set aside. Take your chocolate bar out of the wrapper and break off the bar into three piece sets.
Open your air fryer and place one graham cracker in the basket, top with one set of three pieces of chocolate and one or two marshmellows. Repeat until you cannot fit any more s’mores into the air fryer basket. Do not top the s’more with a graham cracker. Close the lid and turn on to 400 degrees for four minutes.
Lift the lid and take the s’mores out using a spatula to get underneath being careful not burn your hands on the hot air fryer. Serve immedietly.

These air fryer nachos are easy, tasty, and ready to enjoy in minutes! All thanks to the air fryer, nachos are super easy to make! This air fryer recipe is one of my favs!

Making the air fryer nachos is similar to making nachos in the oven but faster with a couple of tweaks! You can make nachos in air fryers for date night, Superbowl, or any occasion! They’re great for any get together! Lately, I’ve been making quite a few air fryer recipes for a couple of reasons: it’s super simple and I usually have a lot on the go so it makes my life easier. I use very little oil so it makes the recipes healthier and just as delicious!

How To Make Air Fryer Nachos
These air fryer nachos are super easy to make in 15 mins and it’ll impress everyone you make them for… if you don’t eat them all yourself first!

The key to any good air fryer nacho recipe is layering and this air fryer nacho recipe is no different! You gotta layer the chips, cheeze and ingredients so that when you eat the top layer you’re not just left with chips, you still have something to look forward to at the bottom!

Prepare your ground round in a pan with a pack of taco seasoning.
While ground round cooks chop your vegetables.
Lay parchment paper at the bottom of the air fryer and poke some small holes in it to ensure proper airflow.
Lay half your chips down on the parchment paper. Put half your toppings on top of the chips.
Add the rest of the chips on top and then add the rest of your toppings on top.
Put the nachos in the air fryer and turn on at 390 degrees for 12-15 minutes.
Be careful when taking out the nachos, grab the corners of the parchment paper and slide onto a plate.
Which toppings you use are ultimately up to you! If you don’t like spice then don’t add jalapeños, some people don’t like olives so don’t add them (but like who doesn’t like olives?!) Here are some suggestions for other toppings you might like!

4 heaping handfuls Nacho Chips
1 cup Plant-Based Cheese Violife is best
¼ cup Black Beans
¼ cup Tomatoes diced
2 tablespoon Black Olives
1 cup Guacamole
2 tablespoon Corn optional
1 stalk Green Onions chopped
½ cup Vegan Sour Cream
1 pack Vegan Ground Round we used Impossible
1 pack Taco Seasoning
2 tablespoon Jalapenos diced, optional

I’m going to show you how to make garlic bread in an air fryer! This air fryer garlic bread recipe is easy, garlic-y cheesy & ready in under 10 minutes!

How do you make garlic bread in an air fryer? I was actually skeptical at first & wasn’t sure if the air fryer would actually toast bread (spoiler: it does!). I was able to make an entire loaf into toasted garlic bread! Depending on the size of your air fryer, you can make lots of garlic bread slices fast.

There are definitely a few more things you may want to add to your garlic bread (vegan cheese anyone?!) but this recipe is a starting point that you can add!

Air Fryer Garlic Bread
How To Make Garlic Bread in Air Fryer
Making garlic bread in air fryers is super easy. You can also make cheezy garlic bread by adding your favourite cheeze to the bread half way through the cooking period.

I used a fresh loaf of crusty french bread, that’s what we recommend for best results, but you can make it with any bread.

Start by melting your butter and stirring minced garlic in with your butter. If you’re lazy you can spread the cold butter on the bread and minced garlic on top of that. I find melting it first makes it more even and distributes the flavor better.
Scoop the butter/garlic mixture onto your sliced bread, half a tablespoon at a time, and spread around evenly. Repeat for all your pieces of bread.
Optional step, sprinkle garlic powder on top, I recommend this step it gives the bread a bit more flavor that’s worth it!
Place as many pieces of bread in the air fryer basket at once without having them stacked on top of each other.
Turn the air fryer on to 400 degrees for 4-7 minutes check every few minutes to ensure they haven’t burned. If you’re adding plant-based cheese add it midway through the cooking time.
Top with parsley flakes and serve.
It truly is that simple and it makes a very crispy and very tasty garlic bread!

Air Fryer Breakfast Potatoes

These air fryer breakfast potatoes are crispy on the outside and tender on the inside. Cook these seasoned potatoes in your air fryer for 15 mins! There’s a secret ingredient that gives them a tasty flavour you won’t find in any other recipe! (see recipe card below)

Most of you know by now that I love two things

So it should come as no surprise to you that I’ve started to combine my love and made breakfast potatoes in my air fryer!

And when I tell you that I nailed this recipe I really did!

It all comes down to one technique and one ingredient that I haven’t really seen any other food blogger use and will talk more about in the next section.

How to make crispy breakfast potatoes in air fryer?
Most restaurants deep fry their breakfast potatoes which gives them that crisp exterior but keeps the inside nice and tender, so it’s very difficult to recreate at home without a deep fryer.

However, I discovered how to make crispy breakfast potatoes in an air fryer that gives you that crunchy exterior with a fraction of the oil!

How To Make Air Fryer Breakfast Potatoes
The technique I used with the potatoes with the secret ingredient are completely optional but highly encouraged as they turned out to be the best potatoes ever.

First, after I cubed my potatoes I let them soak in cold water for 30 minutes to help get rid of the excess starch. Then I drained, rinsed, and dried them off before preparing them. This step is optional although you will notice a difference in crispiness if you do this step!

The *secret ingredient*… liquid smoke. This small but mighty ingredient is used in many cuisines but mainly in meats and chili’s/stews. That didn’t stop us from using a bit in our recipe to impart a slight hickory smokey flavour!

1. Cube your potatoes, rinse under cold water.

*optional* fill the bowl with cold water and let sit for 30 min. Dry off your potatoes with a paper towel and place them in a large mixing bowl.

2. Mix in your olive oil, garlic powder, onion powder, paprika, and liquid smoke.

3. Place in your air fryer basket and turn on to 400 degrees.

Depending on how many potatoes you used will change the amount of time needed. For this recipe and how big my basket is I put them in for 15 minutes, stirring them at the 10 min mark, and they turned out amazing. But depending on your air fryer and basket size you may need more or less time.

4. Plate, top with salt and parsley, mix in your favourite toppings and serve immediately.

*fun fact of the recipe, France actually made potatoes illegal in 1748 for almost 30 years over concerns that they spread disease. Potatoes are native to the South Americas so when Europe was first introduced to them they weren’t sure what to think.

Should you soak potatoes in saltwater before frying?
If you like your potatoes to be extra crispy then I definitely recommend soaking potatoes in saltwater before frying. By doing this it removes any excess starch and helps the potatoes get nice and crispy!

Why are my breakfast potatoes mushy?
There may be a few reasons as to why your breakfast potatoes are coming out mushy. The first reason is you may not be cooking them at a high enough temperature or for a long enough time. Increasing both of those should help. Another way to add crispiness is to soak the potatoes in cold salt water before cooking them, and lastly coating them in cornstarch can help make your breakfast potatoes extra crispy!

1 tbsp Olive Oil
2 tsp Garlic Powder

Instructions

Cube your potatoes, rinse under cold water. Dry off your potatoes with a paper towel and place in a large mixing bowl.
Mix in your olive oil, garlic powder, onion powder, paprika, and liquid smoke. Place in your air fryer basket and turn on to 400 degrees for 15 minutes, stirring them at the 10 min mark. You may need more time depending on how many potatoes you use and your basket size.
Plate, to with salt and parsley, mix in your favourite toppings and serve immediately.

Nachos are one of nature’s greatest creations. They have so much cheesy goodness in each bite. Now I know what you’re thinking “John cheese isn’t vegan” and for the most part you’d be right, but it is possible to make delicious vegan cheese sans dairy! I’ll take you through my favorite vegan nachos recipe that have a ton of protein and taste great! The best part is they’re easy to make! Let’s get started:

Ingredients
1 package beef-less ground round

1 jalepeno diced

1 cup green olives

4 green onions chopped

1 cup tomatoes, diced

2 cup cheeze shreds

.5 cup salsa

.5 cup sour “cream”

1 cup guacamole

Directions
Cook ground round in a pan and set aside
Lay down parchment paper on a cookie sheet
Put down one layer of chips, enough to cover the sheet but not stacked on top of each other
Add one third of your ingredients on top of the chips
Put another layer of chips on top of that
Add the rest of your ingredients on top
Place on the middle rack of the oven
Bake at 350 degrees for 15 min
Check occasionally to ensure they’re not burning
Take out of the oven
Add a scoops of Guacamole and Salsa in the middle on top

Breakfast Burritos To Wake Up For

Let’s be honest waking up is difficult. I thought as I ‘grew up’ that it would somehow become easier but really now I’m just more tired and grumpy. That’s why I made this breakfast burrito recipe! It will actually make you want to wake up and get that booty out of bed!

I actually didn’t eat my first breakfast burrito until I was 20 years old and living in San Diego. I feel like breakfast burritos aren’t as big in Canada and I have no idea why! Since I ate my first breakfast burrito almost 10 years ago I haven’t stopped since. It’s combining all the best parts of breakfast wrapping them in a cozy blanket and letting the flavors have a party in your mouth!

Like most wraps and burritos you can pretty easily interchange the ingredients for whatever you like or don’t like. This breakfast burrito is my favorite combination of the ingredients but feel free to add and remove as you see fit!

Here is your fun fact of the day and this is something that took me almost 3 years to figure out so don’t be embarrassed lol but the Daiya block cheese is actually so good compared to their cheese shreds. The block shred well has a strong cheddar flavor and actually melts pretty good too. I’m not sure why they seem to have forgotten about those things when making their shreds but here we are. Try the block I promise its better than the shreds!

When you’re making the tofu scramble it’s important to press as much water out of the tofu block before cooking or it will take you much longer. There are a lot of techniques on how to achieve this. You can use a paper towel and place a piece on the top and bottom, then add something heavy on top. Or if you’re trying to reduce your waste you could use a dishtowel instead. But if you go through as much tofu as I do that means you’re doing a lot more laundry lol. I recently found a tofu press of Amazon and it’s been working really well for me so far!

Debatably the most important spice for the tofu scramble is the Kala Namak or black salt. It can be really difficult to find it in chain grocery stores so I usually stock up when I go to an Asian market or I get it from Amazon here:

The black salt has a real sulfur smell and taste and will really give your tofu scramble that “eggy” flavor.

Some people may want to add a chunky guac to this recipe instead of just avocado but I like keeping it easy first thing in the morning. You can use my chunky guac recipe here if you’d like though!

The last step is the rolling of the burrito. Now, this is something I’m still learning myself and it’s easily one of the hardest parts out of any of the recipes I’ve made so far! One thing I have learned is DO NOT overstuff the burrito. I’m always tempted to add more because I’m hungry but unless you want to be eating burrito bowls than think less is more in the stuffing department.

If you feel comfortable with it, you can easily make the potatoes, tofu scramble, and ground round all at once. To make it easier on yourself cut and prep everything before you start cooking so you just have to worry about what’s in front of you. If you’re not there yet not to worry! Make each item one at a time, and place them in the oven at a low temp while you make the others! Don’t leave them in there forever or they’ll dry out but you have some time before that happens!

Beyond This World Vegan Sausage Skewers

If you’re craving a summer BBQ but don’t want your typical hot dog or hamburger, this recipe is for you! These vegan sausage skewers are beyond anything I’ve ever tried. They’re so meaty you won’t even be able to tell the difference!

Sausage is as intertwined with sports as balls are… damn it! But seriously if you ever go to a sporting event the chances are good they’ll be serving sausages.

Sausages also happen to be one of the furthest things from vegan. Like most people I never wanted to know how a sausage was made even when I ate meat. However there are people in this world that are truly miracle workers and have figured out ways of turning peas and beans into pretty convincing sausages!

These vegan sausage skewers are actually pretty simple to put together and only require a few ingredients. The main attraction is obviously the sausage and for this recipe, I used Beyond Meat Hot Italian Sausages. You can substitute for whichever vegan sausage you’d like but I can’t promise you the results will be BEYOND this world… I’m sorry, I’ll see myself out now.

First start by chopping all of your ingredients.

Next you’re going to put the chopped ingredients onto the skewer and slide to the end. Fill the skewer until the end but give yourself some space to still be able to grab the skewer by both ends (like corn on the cob).

Now make your skewer marinade. Mix minced garlic, olive oil, oregano, salt and pepper in a bowl.

Turn the BBQ on to medium-high and let it heat up for a few minutes. This step is crucial to keep in the juices! Once the BBQ has been sufficiently heated, transfer the skewers on to the grill. Brush the marinade on one side, but make sure to save enough for the other side when you flip!

This step can also be done before you place them on the grill.
Cook for 5 minutes each side on medium heat. Serve with a fresh summer salad and some cool summer drinks!

Greek Pasta Salad with Tofu Feta

This Greek pasta salad with tofu feta was built for the gods! Or mere peasants like us, you chose lol

There is no question about it, the Greek gods loved to feast and party, and if they passed down one thing to humans it’s their appreciation for robust full-flavoured feasts!

This Greek Pasta Salad with Tofu Feta is light and fresh but packs a hammer of a flavor!

As we’re still developing a lot of recipes we topped our pasta salad with Edgy Veg tofu feta recipe which is unreal and we definitely recommend! Alternatively, you can also just crumble a brick of extra firm tofu into the pasta salad as well to get good results but the tofu feta brings it up a notch. It really depends how lazy you’re being lol.

I say this in a lot of our recipes but this really is another easy recipe. We love keeping them easy for you because that means you have more time to pet dogs! and other stuff I guess…

How to Assemble
Step 1. Bring a pot of water to a boil with a pinch of salt and add pasta. *i don’t need to provide a picture of this right?*

Step 2. While you wait for your pasta to cook cut all your vegetables and set them aside.

Step 3. When the pasta is done cooking, remove it from the heat and rinse under cold water so cool the pasta and remove starchiness.

Cool pasta is easier to handle and makes a better pasta salad.
Step 4. Transfer the pasta to a big mixing bowl. Add all of the veggie ingredients on top and mix in. Don’t add the tofu feta yet because you don’t want to over stir it and have it become mushy.

Step 5. Add your liquid ingredients AKA your sauce. you could premix this part but it doesn’t change anything and it’s just making more dishes soooo we just add it in on top then mix!

Step 6. Last but certainly not least add your tofu feta. Now if you’re just using a brink of extra firm tofu just crumble it in on top and lightly mix in. If you’re using the Edgy Veg recipe you’re going to want to have started this a couple hours a go (or the night before) and let it ferment.

This recipe is perfect for entertaining, for an outdoor picnic or meal prep for a week! Letting it sit overnight really brings out a lot of the flavor!

Lemony Snicket’s A Series Of Delicious Lemon Potatoes

Bad pun’s aside these lemon potatoes really are delicious and super simple to make!

Lemon potatoes are a Greek delicacy! It’s really amazing how much good food has come from Greece… I think it’s time to move! Olives/olive oil, feta, spanakopita, I mean the list goes on!

Potatoes are always getting a bad rap. When you call someone lazy you call them a couch potato. When you feel you don’t look your best you say you look like a potato. What did potatoes ever do to you!? Potatoes are beautiful and delicious! Researchers even argue that humans figuring out how to cook and the ability to digest carbohydrates (specifically potatoes), is the real reason our brain has been able to grow to the size it is today! Hopefully, these lemon potatoes will help put some respect on potatoes name!

Lemon has a list of health benefits; including being high in Vitamin C and soluble fiber. Many people add it to their water every morning for its benefits and warm water lemon and honey is an age-old remedy to the common cold.

On their own potatoes can be quite boring and even with herbs and oil there’s not a huge flavor profile. Now I’m not saying I don’t still eat potatoes by the dozens without anything on them because I do but these lemon potatoes don’t take much more effort and you’ll get a lot more out happy faces out of them!

There are a few tricks to making these lemon potatoes taste their best, first we use fresh herbs whenever we can. It takes the flavor profile of the dish up just a little bit more but feel free to use the dried versions of any herbs we used, just know it could be a little bit better. Second, you don’t want to mix everything together because all of your herbs and seasonings will fall off the potatoes and sit in the liquid below and thus not absorbing any of the flavors.

Now that we’ve talked about the benefits and some tips lets talk about how to make these amazing bundles of deliciousness.

How-To Make
Step 1. Rinse your potatoes.

Step 2. Quarter the potatoes.

Step 3. Cut your lemons in half and add lemon juice and olive oil to the potatoes. Mix.

Juice from one lemon is about 3 tablespoons.
Step 4. Transfer potatoes to a pan and top with fresh herbs. Important not to over mix at this step!

Lemon Potatoes are a cornerstone meal in this house! We’ve simplified them so you don’t even have to work hard to get a delicious meal!

Ingredients
8 Med Potatoes

3 Med Lemons

3 Tbsp Olive oil

2 Tbsp Minced garlic

2 Tsp Onion powder

2 Tsp Fresh dill

1 Tsp Oregano

1 Tsp Salt and Pepper

Directions
Take your potatoes and wash them to get all of the dirt off.
Bring them to the cutting board and cut them into quarters. Transfer to a big bowl for mixing.
Add olive oil and juice from lemons and mix.
Add rest of ingredients to the top of potatoes *
Put in oven at 420 for 40 minutes flipping halfway through.
Pup’s Notes
*Important not to mix the herbs with the juices or they’ll all end up at the bottom of the pan and not on the potatoes.
Salt and Pepper is to taste add more as needed!
