This vegan eggs benedict is so easy to make and it requires no special equipment. You don't need any special occasion to make eggs benedict anymore!

Ingredients
  

Vegan Hollandaise Sauce

  • ½ cup Unsalted Vegan Butter melted
  • 9 tablespoon Just Egg Liquid
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Dijon Mustard
  • 1 pinch Cayenne
  • 1 pinch Salt

Vegan Eggs Benedict

  • 6 Just Egg Foldable Patties or vegan egg alternative
  • 1 pack Vegan Ham
  • 3 English Muffins halved, toasted
  • 2 teaspoon Parsley optional
  • 2 Tomato optional, sliced
  • 1 tablespoon Kala Namak (black salt)

Instructions
 

Vegan Hollandaise Sauce

  • In a small saucepan melt vegan butter on medium-high heat.
    ½ cup Unsalted Vegan Butter
  • While the butter melts, add the rest of the hollandaise sauce ingredients to a blender and blend for 5 seconds.
    9 tablespoon Just Egg Liquid, 1 tablespoon Lemon Juice, 1 teaspoon Dijon Mustard, 1 pinch Cayenne, 1 pinch Salt
  • Once the butter is hot, slowly add it to the blender with the rest of the ingredients on medium speed. Blend together until emulsified, about 1 minute. Set aside.

Vegan Eggs Benedict

  • Heat a large frying pan on medium-high heat with some olive oil. Once the pan is heated add your Just Egg and vegan ham slices. Fry until cooked through, about 4 min each side.
    6 Just Egg Foldable Patties, 1 pack Vegan Ham
  • While that cooks toast your english muffins.
    3 English Muffins
  • Prepare the eggs benedict as follows; english muffin, vegan ham, Just Egg, vegan hollandaise sauce, parsley.
  • Serve hot, with a side of tomato slices.
    2 teaspoon Parsley, 2 Tomato
