Greek Pasta Salad with Tofu Feta

This Greek pasta salad with tofu feta was built for the gods! Or mere peasants like us, you chose lol

There is no question about it, the Greek gods loved to feast and party, and if they passed down one thing to humans it’s their appreciation for robust full-flavoured feasts!

This Greek Pasta Salad with Tofu Feta is light and fresh but packs a hammer of a flavor!

As we’re still developing a lot of recipes we topped our pasta salad with Edgy Veg tofu feta recipe which is unreal and we definitely recommend! Alternatively, you can also just crumble a brick of extra firm tofu into the pasta salad as well to get good results but the tofu feta brings it up a notch. It really depends how lazy you’re being lol.

I say this in a lot of our recipes but this really is another easy recipe. We love keeping them easy for you because that means you have more time to pet dogs! and other stuff I guess…

How to Assemble

Step 1. Bring a pot of water to a boil with a pinch of salt and add pasta. *i don’t need to provide a picture of this right?*

Step 2. While you wait for your pasta to cook cut all your vegetables and set them aside.

Step 3. When the pasta is done cooking, remove it from the heat and rinse under cold water so cool the pasta and remove starchiness.

Step 4. Transfer the pasta to a big mixing bowl. Add all of the veggie ingredients on top and mix in. Don’t add the tofu feta yet because you don’t want to over stir it and have it become mushy.

Step 5. Add your liquid ingredients AKA your sauce. you could premix this part but it doesn’t change anything and it’s just making more dishes soooo we just add it in on top then mix!

Step 6. Last but certainly not least add your tofu feta. Now if you’re just using a brink of extra firm tofu just crumble it in on top and lightly mix in. If you’re using the Edgy Veg recipe you’re going to want to have started this a couple hours a go (or the night before) and let it ferment.

This recipe is perfect for entertaining, for an outdoor picnic or meal prep for a week! Letting it sit overnight really brings out a lot of the flavor!

Greek Gods really didn’t mess around at feasts! Their food has alot going on but don’t let the amount of ingredients scare you away! We promise it’s easy and delicious!

Ingredients

  • 4 cups Dry Rotini Pasta

  • 1 cup Cucumbers, diced

  • 1 cup Cherry Tomatoes, diced

  • 1 cup red/green pepper chopped

  • 0.5 cup Kalamata olives

  • 0.5 cup Queen Stuffed Olives

  • 0.25 cup Sundried Tomatoes, chopped

  • 1 cup Arugula

  • 4 sprigs Dill

  • 1 Lemon, juiced

  • 0.25 cup Oil from sundried tomato jar

  • 0.25 cups Balsamic Vinegar

  • 3 Green Onions, chopped

  • 1.5 Tbsp Nutritional Yeast

  • 0.5 Tbsp Dried Basil

  • 0.5 Tbsp Dried Oregano

  • 0.5 Tbsp Dried Parsley Flakes

  • 0.5 Tbsp Onion Powder

  • 0.5 Tbsp Garlic Powder

  • Salt & Pepper to taste

  • 1 Brick Extra Firm Tofu *optional*

Directions

  • Bring a pot of water to a boil and add pasta.
  • While the pasta is cooking, chop all of your vegetables. (all the way up to lemon on the ingredient list)
  • When the pasta is done cooking, remove it from the heat and rinse under cold water
  • Transfer the pasta to a big mixing bowl. Add all of the veggie ingredients on top and mix in. Don’t add tofu feta yet!
  • Add your liquid ingredients and herbs and mix in.
  • Last but certainly not least add your tofu feta. Mix lightly.

    This pasta salad is to die for, so tasty and delicious! Adding the tofu feta on top is the perfect addition (even non-vegans will love it – I tested it on my family). Y’all have to try this ASAP!
