I have a huge sweet tooth, I can't have any vegan desserts in my house because I'll just eat them all. But since the base of these vegan black bean brownies is black beans instead of flour they are slightly healthier than regular brownies. But equally delicious!

Most people don't think of desserts when you say black beans. Which is fair, black beans are predominantly a savory food. But using the black beans as the base for brownies instead of flour is perfect!
Each one of these vegan black bean brownies has 8g of protein and 5g of fiber, which is a fair cry better than regular brownies. The black beans lend their moist and binding properties to the brownies, making them chewy and delicious!
How To Make Vegan Black Bean Brownies
Vegan black bean brownies are extremely easy to make. They don't require a lot of different tools or dishes and are ready in 30 minutes! The one thing that this recipe does require is a high-speed blender or food processor. It doesn't have to be a super fancy kind, like a Vitamix, but not having a high-speed blender will make this recipe difficult to make as there isn't much liquid involved to help blend the ingredients.
Ingredients for Vegan Black Bean Brownies
- Black Beans
- Sugar
- Maple Syrup
- Semi-Sweet Chocolate Chips
- Sea Salt
- Baking powder
- Vegan Egg (we used Just Egg)
- Coconut Oil
- Vanilla
- Cocoa Powder
Kitchen Equipment I used for recipe:
- Food Processor - I am admittedly not a huge food processor fan. I mean why not just blend it. BUT I do understand that it certainly has a place in the kitchen just not for the majority of things I cook. That being said if you want to have a fully stocked kitchen then this food processor is great, powerful, and won't break the bank.
- High-Speed Blender - I'm a huge fan of the "Ninja" products and this blender is no exception. When I first started to take food and recipe development more seriously I knew I needed to upgrade my terrible $40 blender but couldn't justify splurging on a Vitamix. I read a ton of comparisons and review and this Ninja blender stacks up nicely with the Vitamix and is a huge upgrade to a regular blender with a great entry price point.
Instructions for Vegan Black Bean Brownies
- Preheat your oven to 350 degrees. Grease a standard brownie pan with a small bit of coconut oil.
- In a high-speed blender blend all of your ingredients except for your toppings. Blend until smooth, stopping to scrape the sides down as needed, about 3 min.
- Pour the brownie batter into the pan and gently tap the sides to ensure even spreading. Top the brownie batter with chocolate chips (or other toppings). Bake for 25-30 minutes.
- Remove from oven let sit for a couple of minutes, sprinkle sea salt on top and cut into 9 squares.

Can you use a different egg substitute than Just Egg?
If you don't have access to Just Egg you can sub for any other vegan egg substitute. Use the equivalent of 2 eggs. Flax eggs work very for vegan baking, as do ripe bananas, apple sauce, and Bob's Red Mill Egg Replacement.
How do you store vegan black bean brownies?
You can store these brownies in the fridge in an airtight container for up to 5 days. You can also individually wrap them in parchment paper and freeze them for up to 3 months. This is perfect if you live by yourself (like myself) and don't want to eat all the brownies in a week. Even though they're healthier they're still a dessert. I freeze my extra brownies and warm them up in the oven when I want to use them. They go perfectly with oat or coconut vanilla ice cream.

- 4 tablespoon Just Egg
- 2 teaspoon Vanilla
- 1 teaspoon Sea Salt
- 1 teaspoon Baking Powder
- ¼ cup Coconut oil
- ¼ cup Maple Syrup
- ¼ cup Sugar
- ⅓ cup Semi Sweet Chocolate Chips
- ½ cup Cocoa Powder
Instructions
- Preheat your oven to 350 degrees. Grease a standard brownie pan with a small bit of coconut oil. Thoroughly rinse your black beans under cold water in a strainer until the water stops bubbling.
- In a high-speed blender blend all of your ingredients except for your toppings. I didn't even know I owned a food processor until I wanted to make these, LOL. This is such a quick easy recipe; just dump everything into your blender or food processor and whizz it up! I added some agave syrup for extra sweetness in the batter (my sweet tooth is HUGE) and spread a blob of peanut butter on top of the brownies after they baked. Very decadent, cakey rich brownie!
