Fajitas are classic Tex-Mex cuisine, that many of us have surely seen come out sizzling from the kitchen at our favorite local restaurant. They can be made in so many different ways and top with whatever your tastebuds love.
I've been using soy curls in quite a few recipes and I'm really enjoying how versatile they are. I used to be afraid to cook with them and now I have them several times a week. They're both high protein and a whole food with lots of fiber which I love!
My favorite thing about these vegan chicken fajitas is that they're so shareable. After 2 long years, I can't wait to be able to sit around a big table with friends and load up my warm tortillas as we laugh and drink cervezas!
How To Make Vegan Chicken Fajitas
This vegan chicken fajitas recipe is easy to make using ingredients you can mostly find in your fridge! The only ingredient you may not be familiar with/have on hand are the soy curls (unless you're me and bought 12 pounds worth of them). This recipe makes quite a bit so you will need a large skillet or pan.
Ingredients for Vegan Chicken Fajitas
- Soy Curls (or chicken substitute)
- Red/Green/Yellow Pepper
- Onion
- Jalapenos
- Tortillas
- Guacamole/Avocado
- Pico de Galo
- Vegan Sour Cream
- Limes
- Cilantro
- Spices

- Cast Iron Skillet Set (10 & 12 in) - So I got this set for my birthday from my mom and it seriously is sooo good! I used the larger (12 in) skillet for this recipe and it worked so well! Great quality skillets for an affordable price!
- Pack of 3 Bags of Soy Curls – Soy curls are notoriously difficult to find, especially in small-town Manitoba. They are however easy to find and have free two-day shipping on Amazon, which is where I normally get mine from!
Instructions for Vegan Chicken Fajitas
Vegan Chicken
- Reconstitute your soy curls by placing them in a larger mixing bowl with vegan chicken broth and let sit for 10 minutes. Strain the soy curls and squeeze out excess liquid with your hands.
- Place the soy curls back in the large mixing bowl. Pour the spices on top and mix together until evenly coated.
- In a large cast-iron skillet heat olive oil on medium-high. Once heated pour soy curls into the pan and cook until browned, about 8-10 minutes. Once they're cooked place them in a bowl and set them aside.
Veggies
- Slice your onion, jalapeno pepper, and bell peppers. When the soy curls are down cooking reheat the pan with olive oil on medium-high heat. When the pan is heated stir in your sliced veggies. Cook for 5-6 minutes until the veggies begin to soften.
- Stir your soy curls back into the pan with your veggies. Cook for 1-2 minutes on high heat. Remove from heat and squeeze half a lime over the hot pan.
Serving
- Warm tortillas for 30 seconds in the oven before serving.
- Serve the fajitas pot luck style with, pico de gallo, guacamole, vegan sour cream, cilantro, lime wedges, and warmed tortillas.
