This vegan eggs benedict is so easy to make and it requires no special equipment. You don't need any special occasion to make eggs benedict anymore!
I used to only get eggs benedict when I was going out for a fancy brunch or my mom was celebrating a special occasion but now I make it at least once a week!

The Details
Eggs benedict was first created in the late 1800s in New York City, by Charles Ranhofer. Charles had strong ties to France which makes sense because eggs benedict uses a lot of butter and egg yolks which is very prominent in French cuisine. Since its first inception, there are now hundreds of variations to the original recipe.
Since going vegan I've had vegan eggs benedict at a few different restaurants across the country prepared in a few different ways. The most common way that I've seen used is a slab of extra firm tofu fried as the egg. This method definitely works well and can easily be subbed into this recipe if you don't have access to Just Egg.
How To Make Vegan Eggs Benedict
We are big fans of Just Egg here on this blog and this recipe leans heavily on it for the creation. The Just Egg frozen patties can easily be subbed for any other vegan egg or tofu when it comes to the benedict. For the hollandaise sauce, it would be hard to sub the Just Egg liquid for something else due to its egg-like qualities. If you don't have access to the liquid you can try subbing for silken tofu or soaked raw cashews.
You don't need any special equipment for this recipe. A blender and frying pan are the only things you'll need. I didn't even use a toaster (although you are more than welcome to) I broiled the english muffins in the oven.
Ingredients for Vegan Eggs Benedict
- Vegan Egg (we used Just Egg frozen patties)
- Vegan Ham (we used Yves Ham)
- English Muffin
- Vegan Hollandaise Sauce
- Tomato
- Parsley
- Salt & Pepper

- Saucepan - Everyone needs a good saucepan in their lives for this exact situation, to impress people with your homemade sauces! This saucepan set is of great quality and it's aesthetically appealing!
- Toaster - Although you don't necessarily need a toaster for this recipe if you are in the market for one this is a great buy! It's a 4 slice toaster with a warming rack on top to keep your buns toasty warm!
Instructions for Vegan Eggs Benedict
Vegan Hollandaise Sauce
- In a small saucepan melt vegan butter on medium-high heat.
- While the butter melts, add the rest of the hollandaise sauce ingredients to a blender and blend for 5 seconds.
- Once the butter is hot, slowly add it to the blender with the rest of the ingredients on medium speed. Blend together until emulsified, about 1 minute. Set aside.
Vegan Eggs Benedict
- Heat a large frying pan on medium-high heat with some olive oil. Once the pan is heated add your Just Egg and vegan ham slices. Fry until cooked through, about 4 min each side.
- While that cooks toast your english muffins.
- Prepare the eggs benedict as follows; english muffin, vegan ham, Just Egg, vegan hollandaise sauce, parsley.
- Serve hot, with a side of tomato slices.

Can you make this ahead of time?
You could possibly make this ahead of time but I would try to avoid making this recipe ahead of time. Try to prepare this recipe as close to serving as possible and serve hot with a nice mimosa!
How do you store vegan eggs benedict?
This recipe does not store very well. Once all of the ingredients are mixed they're best enjoyed hot and fresh. Unlike some other recipes that benefit from spending time together, this recipe would begin to deteriorate. If you do plan on storing the extras store all of the ingredients in separate containers in the fridge for up to 5 days.
