I LOVE sweet potatoes, but I've always found them hard to work with. Especially compared to regular potatoes. I finally discovered that chopping them into smaller cubes and seasoning them makes your life so much easier!
I eat a lot of bowl and power bowl type meals. Especially when I'm in training mode they are the perfect way to get a lot of nutrition that isn't boring! This vegan sweet potato power bowl is packed with a ton of nutrition which I love!
How To Make Vegan Sweet Potato Power Bowl
This sweet potato power bowl is simple and easy to make and doesn't take long to make at all. You don't need any special equipment or techniques. You can use an air fryer instead of an oven for both the sweet potatoes and the chickpeas and get great results as well.
Ingredients for Vegan Sweet Potato Power Bowl
- Sweet Potatoes
- Chickpeas (from a can)
- Hummus
- Avocado
- Lime
- Cherry Tomatoes
- Green Onions
- Lime Crema (optional)
- Cilantro (optional)
Kitchen Equipment I used for recipe:
- Big A$$ Bowl - I pretty much use this bowl for all of my meals because it's my favorite! (yes I understand that makes me old lol) but I seriously love this bowl and don't use any of my plates anymore because of it!
Instructions for Vegan Sweet Potato Power Bowl
- Preheat your oven to 425 degrees
- Cube your sweet potato and mix in a bowl with olive oil and spices ( we used salt, pepper, cinnamon, and cumin)
- Drain and rinse your chickpeas.
- On a large oven pan layout sweet potatoes on half and the chickpeas on the other half. Bake for 30 minutes turning halfway.
- While that bakes halve the cherry tomatoes, chop the green onions, slice your avocado and lime.
- When they’re done baking scoop the sweet potatoes and chickpeas into a bowl and place the other ingredients around them.
- Top with vegan lime crema and cilantro.
- Enjoy!

Can you make this ahead of time?
This recipe would best be made and enjoyed fresh. There are certain elements that you can prepare ahead of time such as the sweet potatoes and the chickpeas.
How do you store vegan sweet potato power bowls?
It's best to store everything separately for this bowl if possible. Reheating the whole bowl with hummus and avocado and tomatoes may not be ideal. As such if you can put all the ingredients in separate containers for up to 48 hours.
